Fresh green bean soup Hozzávalók:500 g (1 Ib) green beans, 1 carrot, 1 parsnip, 50 g (2 oz) lard or 4 tbs oil, 40 g (11/2 oz) flour, 1 clove garlic, 7 tbs soured cream, salt, 1/2 tsp noble sweet paprika, 11/2 litres (21/2 pt) meat stock made with bones or 2 beef stock cubes.
Elkészítés módjaWash the beans and cut into 2 or 3 pieces. Then cook in the stock made with the bones or the stock cubes until tender. Make a roux with the lard or oil and flour, adding the paprika and the crushed garlic. Dilute with a little water before adding to the soup. Bring to the boil and add the soured cream. Serve piping hot. Little dumplings can be cooked in the soup if desired. |
